  • 1 cup corn (frozen, or canned)
  • 1 cup chicken breast (cut in 1/2-1-inch cubes)
  • 1/2 cup green onion (chopped)
  • 1 small bell pepper (chopped)
  • 1 (4 ounce) can diced green chilies
  • 1 (2 ounce) can pimientos
  • 1 (12 ounce) can evaporated milk
  • 1 1/2 cups whole milk
  • salt and pepper
  • 1 cup sharp cheddar cheese (shredded)
