Ingredients

  • 3 - 4 limes 2 bone-in, skin-on chicken breast halves, each about 10 oz (315 g)
  • 1 t kosher salt, plus more, to taste
  • 1/2 tsp freshly ground pepper, plus more, to taste
  • 1 Tbs. Olive Oil
  • 1 large onion, chopped
  • 5 garlic cloves, minced
  • 1 jalapeno chile, minced
  • 3 cups (750ml) low-sodium chicken broth
  • 1 1/2 tsp dried Mexican oregano (or regular Oregano)
  • 1 Avocado, pitted, peeled and diced
  • 2 oz (60 g) queso fresco or mild feta cheese, crumbled
