Ingredients

  • 2 c elbow pasta
  • 2 tbsp fresh lime juice
  • 4 tbsp virgin olive oil
  • 1 clove garlic, minced
  • 1 tsp Kosher salt
  • 1/4 tsp freshly-ground black pepper
  • 1/2 cup fresh pico de gallo
  • 3 plum tomatoes, finely chopped
  • 1 c pitted black olives, coarsely chopped
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (5 oz) can chopped green chilies, drained
  • 1 tbsp finely chopped fresh cilantro
