Ingredients

  • 4 medium sweet potatoes, peeled and cut into 3/4 inch chunks
  • 2 tablespoons canola oil
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 2 cups corn kernels (fresh or frozen)
  • 2 cups canned black beans, drained and rinsed
  • 4 scallions, thinly sliced
  • 1/2 cup chopped fresh cilantro
  • 1 chipotle chili (from a can of chipotles in adobo)
  • 1 clove garlic, finely minced
  • 2 tablespoons Thai sweet chili sauce
  • 6 tablespoons fresh lime juice
  • 1/2 cup canola oil
