Ingredients

  • 1 cup quinoa, dry
  • 2 tbsp olive oil
  • 2 garlic cloves, crushed
  • 1 cup frozen corn kernels
  • 3 any colour medium-large bell peppers, diced
  • ½ medium jalapeño pepper, seeded and diced
  • 1 tbsp cumin
  • 1 tsp chili powder
  • 1 tbsp fresh lime juice
  • 2 cups chopped seeded plum tomato
  • 15 oz can of black beans, rinsed and drained
  • ½ cup plus 2 tbsp (for garnish) cilantro, chopped
  • ¼ cup plus ¼ cup (for garnish) green onions, chopped
  • ¼ cup sliced ripe olives
  • 1 cup shredded Monterey Jack cheese
