Ingredients

  • 2 lb pork belly with skin, cut into chunks
  • 2 tbsp olive oil
  • 1 large onion, coarsely chopped
  • 4 garlic cloves, coarsely chopped
  • 3 red chillies, seeded and chopped
  • 1 tbsp smoked paprika
  • 1 tbsp oregano
  • 1 tbsp cumin
  • 1 tsp chipolte chile pepper powder
  • 3 tbsp Mexican chili powder
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 cup red wine
  • 3 cups chicken broth
  • 1 can diced tomatoes
  • 1 tbsp chilli paste
