Even though I’m latina I have never eaten an enchilada, much less used enchiladasauce. Thisisjust perfect for those busy weeknights when you want to offer to your family something hot and delicious but without the hassle of spending hours cooking it
– Whisk together the lime, oil and salt (and chipotle sauce, if using). So a quick rummage in the larder later and I had the ingredients I needed for this wonderfully zingy and alive rice and bean salad, which also handily continued the Mexican theme that started with pinto bean soup the other day
My husband loves a meat pizza so for this one I topped it with our homemadesauce, chopped sweet onions, pre-cooked ground beef, a little grated Parmesan cheese, fresh mozzarella and a rich flavorful Gorgonzola cheese
Add beef and cornstarch mixture. Add 1 tsp (5 mL) of the cornstarch, ginger and water. In small bowl, stir remaining cornstarch, black-bean-and-garlicsauce, hot pepper sauceand 3/4 cup (175 mL) water. stir-fry onion, garlic, carrot, celery and water chestnuts until tender-crisp, 2 minutes. In saucepan, bring 1-1/2 cups (375 mL) water to boil. Cover and simmer over low heat until tender, about 20 minutes
There isn’t a salad worth eating if it doesn’t contain crumbles of cheese and a dressing of some sort, so this chicken salad is topped with crumbles of queso fresco and a creamy dressing of salsa, sour cream and tart lime juice
I adore all things Tex-Mex/Mexican/Southwest in flavor and that includes all things enchilada. It’s not dark chili powder, hot Mexican chili powder, or cayenne powder (though those would probably work great if you like things hot, I haven’t tried them though)
Add the red wine and cook for one minute. Add the canned tomatoes and bring to a boil, stirring often. Season with salt if desired (I usually don't need to) and serve

The black beans, quinoa, veggies and cheese give the filling a wonderful texture, and the creamy avocado lime sauce adds a satisfying decadence when you dig into these peppers
