I can't wait for spring to arrive, and nothing feels more like spring to me than MeyerLemonCurd. MeyerLemons although still sour, are less acidic than a regular lemon
I've never been super fond of the title "LemonCurd". But when you take fresh, delicious lemons, some sugar, eggs and a touch of butter the resulting concoction is so delicious, I don't really care what it's called
For the LemonCurd. In a small pan mix the yolks with sugar, zest and the lemon juice. Press the gelatin sheet thoroughly to remove the extra liquids and put it into a warm curd (wait for it to melt completely)
This one marries together raspberries with my beloved little meyerlemons. Contrasting that creamy, light layer of lemon panna cotta is a layer of raspberry gelee at the bottom of the glass
Add butter, lemon juice and mix. "Curd (creme) de Limão". and peels from 2 lemons. lemon peels in the mixing bowl and pulverize 25sec/speed 9. and peels from 2 lemons
