You can replace samaiwith kodo millet (varagu), barnyard millet (kuthiravaali) etc. You can also open cook thissakkarai pongal by following the same recipe
You can make the same way to make samai, thinai ven pongal. We used to add milletslikeragi, varagu, thinai (foxtailmillet) and Sorghum (Jowar/cholam) in our weekly menu to reduce the whitericeportions
So today triedthisThinaiSakkarai Pongal / FoxtailMillet Pongal. I usually do not saffron to my sakarai pongal but thistime for extra flavor and color, i added few strands of saffron to my millet pongal
