Ingredients

  • 2 sponge cakes, layers (bought cake or ladyfingers)
  • 1/2 cup white wine
  • 1 (450 g) can apricots, sliced, well drained
  • 1 (450 g) can pineapple chunks, well drained (save 1/2 cup syrup)
  • 2 1/2 cups milk
  • 2 tablespoons custard powder
  • 2 tablespoons sugar
  • 1 1/4 cups whipping cream (about 300ml)
  • 1/2 teaspoon vanilla
  • 2 teaspoons gelatin
  • 2 tablespoons water
  • 250 g strawberries, 1 punnet (or tray)
  • 3 passion fruit
  • 1 1/4 cups whipping cream (about 300ml)
