Mini Caramel Apple Streusel Cheeecakes

Ingredients

  • 1 ⅓ cups graham cracker crumbs (I like Honeymaid)
  • 12½ T. sugar
  • 16 T. salted butter, melted
  • 1½ cup flour
  • 1¼ cup quick cooking oats
  • 1¼ cup + 2 Tbsp light-brown sugar
  • 1¼ tsp ground cinnamon
  • 1 ⅛ tsp salt
  • 1¼ cup butter, partially melted in microwave
  • 116 ounces cream cheese, softened
  • 1 ⅔ cup sugar
  • 12 eggs
  • 1¼ cup sour cream
  • 11 tsp vanilla extract
  • 11 lb apples, peeled, cored and finely chopped* (I used Gingergold)
  • 1 Salted caramel sauce, homemade or jarredPreheat oven to 325 degrees. Line 18 muffin cups with liners.
  • 1 In a mixing bowl, combine melted butter, graham cracker crumbs and sugar.
  • 1 Divide mixture into liners and press down firmly o form little crusts.
  • 1 Bake 5 minutes and cool.
  • 1 To the melted butter, stir in flour, oats, brown sugar, cinnamon and salt. Stir until clumps form and park in the fridge while you make the filling.
  • 1 Beat cream cheese with sugar until smooth.
  • 1 Add eggs until smooth.
  • 1 Add sour cream and vanilla.
  • 1 Pour cheesecake batter evenly over the mini crusts.
  • 1 Top with chopped apples evenly.
  • 1 Sprinkle on streusel topping.
  • 1 Bake about 25 mins.
  • 1 Cool and chill in fridge a few hours.
  • 1 Top with caramel!
