Ingredients

  • 20 mini pies
  • 1 tablespoon butter
  • 1 tablespoon oil
  • 600 g boneless chicken, cut into cubes (I used 2 breast fillets)
  • 1 large leek, (white part only) sliced (2 cups leek)
  • 1 large carrot, finely chopped (1 cup)
  • 3 garlic cloves, finely chopped
  • 2 tbsp plain flour (or all purpose flour)
  • 1 ½ cups chicken stock
  • 1 tsp dried rosemary
  • 4 puff pastry sheets, thawed
  • 1 egg
  • Milk
  • Water
  • Salt and black pepper, to season
