or so my family has enjoyed a fun Saturday night at our friend’s big annual Luau party. For the past several years I’ve had the fun job of making dessert for all of the party guests… all 100 or so! When the party invitations go out, the guests are asked to bring a dish to share, but no dessert… that’s my job! =) I usually make 3-4 different items, and I like to make a few different things each year. In past years I’ve made Pina Colada Cupcakes, Coconut Snowballs, Cupcakes with pretty fondant flowers, and lots of different decorated cookies including Floral Luau Cookies, Grass Skirt Cookies, and Hibiscus Flower Cookies.
Great little mini sized food gets me all giddy inside. Mini Apple Crisp Cheesecakes24 wonton wrappers (2 for each cup)4 ounces cream cheese1 tsp vanilla extract (use a bean if you have one, scrap down the inside and add it)1/4 cup powdered sugar1 egg1 1/4 cup apple pie filling (yep, straight from the can kids)1/2 cup instant oats1/3 cup brown sugar1/4 tsp cinnamon1 tbsp melted butterPreheat oven to 375 and spray your muffin tin with nonstick cooking spray, inside and on the top surface. Cool completely, then divide cherry pie filling evenly over the minicheesecakes. I'm mentioning this because I substituted all fat free cream cheese which resulted in a different texture (note the somewhat messy cheesecake in the forefront)
