cheesecakes using a mini cheesecake pan (I found mine at Home Goods, but they are easily available on-line from Amazon or Sur la Table). The mini cheesecakes may be a tiny bit of extra work to deal with initially, but once baked and cooled, they make a perfect small serving, with no cutting needed.
This was my first attempt at baking in my minicheesecake pan and I had no idea what I was doing. To assemble, using a mesh sieve, lightly dust cheesecakes with pumpkin pie spice before or after topping with a swirl of whipped cream
Add in the pumpkin puree and pumpkin pie spice and beat until smooth. To remove from the pan, run a knife around the outside of the cheesecake and then flip the pan over onto a plate

Meanwhile assemble the cheesecake filling. Pour cheesecake mixture into cooled muffin tin. Place in the oven and bake for 20 minutes or until the cheesecakes are set
Make a layer of cheesecake and a layer of pumpkin pie. This year we're probably going to make this turkey, these sweet potatoes, stuffing using this gluten-free bread, pumpkin shaped rolls, mashed potatoes and gravy, cranberry relish, and maybe some beans like these or something, not to mention a million pies like this caramel apple one
Cool completely, then divide cherry pie filling evenly over the minicheesecakes. I'm mentioning this because I substituted all fat free cream cheese which resulted in a different texture (note the somewhat messy cheesecake in the forefront)
Pour ganache over each minicheesecake. Make cheesecake filling. Lightly grease three mini springform pans or line a standard 6 muffin tin with cupcake liners
