Ingredients

  • 200 g minced pork (any mince is fine, or even tofu)
  • 1 tablespoon oyster sauce
  • 2 eggs, whisked lightly
  • 400 g Shanghai noodles (or egg noodles, soba noodles, ramen noodles, vermicelli, angel hair pasta, you can use anything)
  • 2 carrots, julienned
  • 2 cucumbers, julienned
  • 2 cups mushrooms, sliced finely
  • 2 cups cooked chicken, shredded
  • 1 cup celery, sliced finely
  • 1/2 cup chives, chopped finely
  • 3 tablespoons chilli oil (reduce as necessary)
  • 1 tablespoon shallot oil
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 clove garlic, minced
