But since I wanted sometime fusion rather than the traditional Steamed Prosperity Cakes (Fa Gao - 发糕), I decided to use a sponge cakerecipe and give it a twit by adding instant coffee powder and brown sugar to achieve a similar colour like Fa Gao
I frosted the cake with a rich cappuccino buttercream, flavored with plenty of rum and one of my favorite ingredients, Espresso Powder, to give it an intense coffee flavor

I only make half a recipe from the following coffee icing for the above cake, which is sufficient. For this recipe, I use Nescafe instant coffee powder since I do not have any espresso powder
The banana cake is deliciously moist with layers of banana, walnuts and a touch of coffee flavour. Add the vanilla and espresso powder or instant coffee powder, then beat in the eggs one at a time until fully incorporated into batter
I adapted these muffins from the Basic Muffins recipe and added lots of cocoa to reduce the strong flavor of the coffee so that I would not end up with a migraine and replaced milk with yogurt
