Ingredients

  • 8 dried New Mexico chiles, seeded and stemmed (you can substitute other dried red chilies of your choice if you can’t find New Mexico or guajillo chiles)
  • 8 dried guajillo chiles, seeded and stemmed
  • 1⁄4 teaspoon caraway seeds
  • 1⁄2 teaspoon cumin seeds
  • 1⁄2 teaspoon coriander seeds
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 4 cloves garlic
  • 2 tablespoons lemon juice
  • 2 tablespoon olive oil
  • 1 small onion, diced
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, grated
  • 1 lb chicken breast, diced (vegetarian/vegan: use 3 extra cups squash and an extra can of garbanzo beans)
  • 2 teaspoons ground turmeric
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • ½ teaspoon ground cinnamon
  • 1 cup water
  • 3 chicken or vegetable bouillon cubes
  • 1 (15 ounce) can garbanzo beans, drained
  • 1 tablespoon harissa (or less if you prefer less spicy)
  • 1½ tablespoons honey (vegan: substitiute agave syrup)
  • ⅓ cup dried apricots, diced
  • ⅓ cup raisins
  • ⅓ cup slivered almonds
  • 2 tablespoons fresh lemon juice (or ½ of a preserved lemon if you’re fortunate enough to have them)
  • 4 cups butternut squash, peeled, seeded and cut into bite sized pieces
  • Salt to taste
  • Extra slivered almonds for garnishing

  • For the couscous
  • 2 cups water
  • 2 tablespoons butter
  • 1 chicken or vegetable bouillon cube
  • 2 cups couscous
