Ingredients

  • 500 g lean minced beef
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • dash of worcester sauce
  • 125 g mozzarella, cut into 8
  • 2 tbsp of flour
  • Oil for frying
  • 1 chopped onion
  • 1 clove of crushed garlic
  • 1 tin of chopped tomatoes
  • 1 tbsp tomato puree
  • 1 tsp sugar
  • 200 ml of vegetable stock (or boiling water with 1 veg stock cube)
  • 1 tbsp dried basil
  • 1 tbsp balsamic vinegar
  • 600 g of carrot and courgette, spiralized
  • 2 tbsp of pesto
  • Freshly grated Parmesan to serve
