MurungaiKeerai known as DrumstickLeaves is a rich source of Iron and Vitamin A and I try to include it whenever I could get hold of it which is very rare though
To put it simply, this Dosa/ Indian Pancake is cooked in a small wok which is known as 'Appachatti'. The healthy addition I have given to the dosa is adding the drumstickleaves to the batter
Grind the leaves to a smooth paste in a mixer grinder/blenderby adding required amount of water. Add the ground amaranth leaves paste to the flour mix and make it a dough by adding required amount of water

Usually this dish is prepared with amaranth leaves, I just replaced it with fenugreek ones. When the dal is half done, add the fenugreek leaves, onion, garlic and tomato
Do not add water and cook leaf, water will be generated by leaf when cooked on low. Clean the leaves, separate it from thick stem, small stem is fine to eat
