Ingredients

  • 230 g cake flour
  • 50 g sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 65 g coconut oil
  • 1 egg + 1 tsp vanilla extract
  • 65 g milk
  • 25 ml lemon juice
  • zest from 2 lemons
  • 40 g walnuts, lightly toasted and chopped
  • 烤箱预热至 240摄氏度。麦芬烤盘铺上纸托
  • – batter is very thick. divide into 3 equal portions, and place into muffin liners

  • – turn temperature down to 220 degrees C, and bake muffins for 10 mins. then reduce to 200 degrees C and bake for a further 21 mins (please tent muffins with foil once it browns)
  • 烤箱温度降至 220摄氏度,将麦芬烤 10分钟。再次降温至 200摄氏度继续烤 21分钟。麦芬上色后,盖上锡纸以免顶部烧焦
