This is a very quick and easy recipe, it uses ground flax mixed with water as a binder, however, I got ahead of myself and mixed the ground flax in with the dry ingredients, instead of mixing it with the wet, it didn’t change the outcome — delicious

Usually I’m totally happy with my daily green smoothie (with loooots of spinach or kale), but once in a while I feel like having a hearty breakfast or even brunch
and a breakfast I feel GREAT about feeding my kids. Because my kids, like most kids, are early risers. These Breakfast Egg Muffins are loaded with all your breakfast favorites
But pre-made frozen food isn’t my favorite (long, unpronounceable ingredient lists and higher price tags), so I thought I’d make my own, healthier frozen breakfast sandwiches
The resulting baked goods are rich and moist and turn out so well, I regularly use avocado in place of butter for these muffins even though I am not vegan myself (I used chicken eggs and cow milk for this particular batch)
