I highly recommend you take advantage of that the same way I did and make this cake. It’s so airy and light, a classic cream cheese icing flavor whippedwith heavy cream until it’s light and fluffy… it will literally melt in your mouth
She joined the cakes together withsomewhipped cream. I have wrapped the cake pans with foil, becoz of my oven temp I usually get too browned outer crust, so you can either reduce the oven temperature a bit or wrap it if you have the same issue

Quite possibly it could have something to do with it’s name and the fact it contained a vegetable in it and also it may have been from tasting the wrong carrot cakes, but once you’ve had a really good carrot cake, you will be hooked
