Ingredients

  • 1 bag of Gardein Chick’n Strips
  • 1 medium onion, sliced in pieces
  • 2 carrots, cut in pieces
  • 1 medium potato
  • ½ cup of green bell pepper
  • ½ cup of red bell pepper
  • 2 garlic cloves
  • 1 tbsp coconut oil (this is used to sauté’ chick’n)
  • 2 tbsp curry (I use Jamaican Curry)
  • 1 tsp Turmeric
  • 1 tsp Ginger
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp cinnamon
  • 1 cup coconut milk
  • 2 bay leaves
