Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 3 tablespoons grapefruit zest (the zest of ~1 medium grapefruit)
  • 2 teaspoons baking powder
  • a pinch of ground kosher salt
  • 1 cup extra-virgin olive oil
  • 1 1/4 cup granulated sugar + 1/3 cup 1 teaspoon pure vanilla extract
  • 6 large eggs, at room temperature and separated
  • 1/2 cup freshly squeezed grapefruit juice (the juice of ~1 medium grapefruit)
  • 1/4 teaspoon cream of tartar
  • 1 cup salted butter, room temperature
  • 3-4 cups icing sugar
  • 3 tablespoons freshly squeezed grapefruit juice
  • 3 tablespoons 35% cream
  • fresh fruits and icing sugar, to garnish (optional)
