Ingredients

  • 8 eggs
  • 1 tbsp cream
  • 1/2 tsp fresh tarragon, chopped
  • Salt and pepper
  • 3 tbsp butter
  • 1 cup leeks, finely sliced
  • 1 1/2 cups asparagus, in 1 inch diagonal slices
  • 1/2 cup bacon, diced and fried crisp
  • 1 large tomato, seeded and diced
  • 1/2 cup feta, crumbled
  • 6 minutes Remove from flame and sprinkle with the bacon and tomato.
