Ingredients

  • 1 cup filtered water
  • 7 tablespoons unsalted butter or dairy-free like Earth Balance
  • 7 tablespoons (52 grams) gluten free oatmeal, ground to fine flour in a coffee mill or blender
  • 3 tablespoons (22 grams) tapioca starch. Try gluten-free organic cornstarch or arrowroot if you don't have tapioca. I also like using gluten free sweet rice flour (the grams will be different so use tbsp)
  • 2 tablespoons (12 grams) nonfat dry milk powder, (sub-try almond meal flour for dairy-free)
  • 1/2 teaspoon (4 grams) sea salt
  • 1/2 teaspoon xanthan gum, (sub-try ground psyllium husks or guar gum) or try without.
  • 3 large eggs, lightly beaten and set aside
  • 1/3 cup (50 grams) gluten-free 100% organic Fair Trade 70% cocoa dark chocolate, chopped
  • 3 tablespoons milk of choice or heavy cream
