  • 7 dozen Ingredients 1 cups all-vegetable shortening 2 cups granulated sugar 1 can (16 oz) Libby's pumpkin puree 2 eggs 2 teaspoons vanilla extract 4 cups all-purpose flour 2 teaspoons cinnamon 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon nutmeg ½ teaspoon allspice 2 cups raisins 1 cup chopped nuts (I used Pecans) Instructions Preheat oven to 350 degrees and line a cookie sheet with parchment paper. Combine shortening, sugar, pumpkin, eggs and vanilla in a large bowl and beat well. Your batter should be light and fluffy. Combine the remaining dry ingredients in a large bowl and whisk together to thoroughly combine. Add to the pumpkin mixture and mix well, then stir in the raisins and nuts. Drop by rounded tablespoonfulls onto your parchment-lined cookie sheet and cook for 12-13 minutes. 3.2.2807
