One Dish Baked Salsa Chicken Casserole

Ingredients

  • 1 lb boneless skinless chicken breasts, trimmed & butterflied
  • 1¾ cup uncooked rice
  • 11¾ cup water
  • 1½ cup salsa
  • 11 Tb butter, melted
  • 11 packet McCormick Organic Taco Seasoning Mix, divided
  • 1 ~1 cup shredded Mexican cheese blendPreheat oven to 375 degrees.
  • 1 Pour the uncooked rice, melted butter, water, and 1 teaspoon of the taco seasoning into a 9 x 13 baking dish. Stir to combine.
  • 1 Place the butterflied chicken breasts and remaining taco seasoning into a large zip top bag and shake to fully coat.
  • 1 Lay the seasoned chicken breasts on top of the rice and pour salsa over the top.
  • 1 Sprinkle with cheese, cover with foil, and bake for 30 minutes or until chicken is fully cooked through.
  • 1 Stir rice then serve.
