Ingredients

  • 1 heaping Tablespoon coconut oil
  • 1/2 cup onion, chopped
  • 1 jalapeno, chopped (optional)
  • 1 small can diced green chiles
  • 1-2 Tablespoons Taco Seasoning
  • 1 cup frozen corn
  • 4-6 cups cooked brown rice
  • 4 cups cooked black or pinto beans
  • 2 teaspoons sea salt (or to taste)
  • 1 can diced tomatoes
  • juice of one small lime (optional)
  • 1/4-1/2 cup salsa
