  • 12 ounces dry pasta
  • 1/2 medium eggplant
  • 2 teaspoons salt
  • 2 tablespoons olive oil
  • 1 portabella mushroom
  • 3 cloves garlic
  • 1/4 cup sliced
  • 1 1/2 cups vegan marinara sauce (mine was from a jar, not
  • a can)
