Ingredients

  • 1 cup water
  • 4¼ cups corn kernels (from 6 medium ears of corn)
  • 1 tablespoon chipotle chile in adobo sauce, very finely chopped
  • 3 tablespoons unsalted butter, softened
  • 1/2 teaspoon lemon zest
  • ½ teaspoon kosher salt

  • 2 bunches collard greens, rinsed and sliced into 1″ wide ribbons
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup water
  • 1/2 teaspoon crushed red pepper
  • 1/2 lemon fresh parmesan to grate over top
