Ulli Vada is Kerala's own Onion Fritters and is also known as OnionPakoda in North India. Ulli Vada is nothing but onion thinly sliced mixed with besan flour, little rice flour (its optional), Kashmiri chilly powder, turmeric powder, and a pinch of asafoitida (kayam)
Roast in preheated oven 30 minutes then remove from oven and add bell pepper and red onion over potatoes and toss, then return to oven and roast about 10 - 15 minutes longer until chicken is golden and cooked through and potatoes are tender (you can broil during last few minutes to help brown a little more if desired)
For onion stuffing. In another mixing bowl, add chopped onion, flattened rice / poha, green chillies, red chilli powder, cumin powder, chaat masala powder and required salt, mix well nicely and set it aside
This will ensure uniform color & crispness to pakoda or else Onion mixture will become watery. Take small amount of sliced onion and mix with little flour, if needed sprinkle little water ( I never used water)
Stir in the onions, garlic, and bell pepper. Loaded with smoked sausage, rice, peppers and onions, it’s a meal ready in 30 minutes or less.
