I used it as inspiration for this Spring Vegetable Pasta Salad. She used different vegetables and added cheese, but I just stuck to what I thought looked appetizing in the supermarket
along the way I threw in some whole garlic cloves and chickpeas and some shawarma spice mix – a middle eastern spice mix including cinnamon and cloves – but any spice mix of your choice would work
Add vegetable broth, 1 cup water, tomatoes and pepper. In saucepan, heat oil over medium heat. cook leek, carrot, celery and garlic, stirring occasionally, until tender, about 5 minutes
Cook pasta in boiling salted water. While pasta is cooking in a medium bowl, toss gently together the tomatoes, mozzarella,zucchini,olives, basil leaves and hot pepper flakes add cooked pasta and olive oil
Add remaining salad ingredients and gently toss to combine. Cut avocado into cubes and place in bowl. Squeeze the juice from ½ lemon over the avocado and gently stir to combine

Adapted by Chris Scheuer from Ottolenghi's "Plenty" cookbook Recipe type. Our eyes were wide when we stepped through the door and saw the dazzling array of artisan breads, fresh, vibrant salads, delicious looking sides, amazing entrees and out-of-this-world tarts, pies, cookies, bars, meringues… After much debate, we made our selections, and they were carefully packed in little brown take-out boxes

I cooked the chicken and vegetables on low for a little over two hours, made sure the chicken was done, and added the dried apricots for about 20 minutes, then served
This is one of those salads which tastes so amazing that you have to keep making it. Soak the noodles in a bowl of warm water until soft, then drain and put back in the bowl
