  • 3/4 lb mung bean sprouts
  • 6 oz brown rice noodles, 1/4 in widesauce:juice of
  • 2 limes
  • 2 tablespoons ketchup
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon brown sugar
  • 1/4 cup fish sauce or soy sauce
  • 3 tablespoons canola oil
  • 3-4 garlic cloves
  • 1 tablespoon minced fresh chile
  • 1 teaspoon crushed red pepper flakes
  • 2 cups grated carrots
  • 4 large eggs
  • 2/3 cup chopped peanuts
  • 6-8 scallions
  • 1 cup
