  • 4 - 6 ounce flounder fillets
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon cardamon powder
  • 1/8 teaspoon smoked paprika
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 lemon
  •  
  • Emulsion
  • 1 1/4 cup vegetable stock
  • 1 bunch asparagus ( about 2 cups chopped, tough bottoms removed)
  • 2 shallots, chopped
  • 1 lime, juiced and zested
  • 1/2 teaspoon baking soda
  • 6 tablespoons unsalted butter
  • salt and pepper to taste
