Ingredients

  • 8 or more as a side dish
  • 1 small sugar pumpkin or 1 medium butternut squash
  • 1 tablespoon safflower or other high-heat oil
  • 1 medium red onion, quartered and thinly sliced
  • 2 large or 3 medium ears fresh corn
  • 1/ 2 medium red bell pepper, finely diced
  • 1/4 cup toasted pumpkin seeds (pepitas)
  • Fresh rosemary leaves from 1 sprig, or to taste
  • 1 teaspoon whole cumin seeds or ground cumin
  • 1 tablespoon agave nectar
  • Salt and freshly ground pepper to taste
