  • 1 pound medium asparagus (18-20 spears)
  • 2 tablespoons light mayonnaise
  • 2 - 3 large egg whites (about 1/3 cup)
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup panko breadcrumbs
  • 3 tablespoons grated Parmesan cheese
  • salt and pepper to taste
  • olive oil cooking spray
