Ingredients

  • 125 g butter, at room temperature
  • 75 g confectioner’s (icing) sugar
  • 1/2 tsp salt
  • 1 egg
  • 1/2 tsp vanilla extract
  • 240 g all purpose flour, sifted
  • zest of one lemon (unwaxed, preferably organic)
  • juice of 2 passion fruits and 1 to 2 lemons to make up 100g of juice
  • 100 g sugar
  • 2 eggs
  • 90 g cold butter, cut into pieces
  • 3/8 tsp powdered gelatin
  • 2 egg whites
  • 90 g sugar
