  • ⅔ cup passion fruit pulp or puree
  • 2 large egg yolks
  • ⅓ cup granulated sugar
  • Pinch of salt
  • 1½ teaspoons (1/2 envelope) unflavoured gelatin powder
  • 2 tablespoons water
  • 1½ cups heavy (whipping) cream, cold
  • ½ cup water
  • ½ cup granulated sugar
  • ⅓ cup passion fruit pulp or puree
