Ingredients

  • 2 sticks of unsalted butter, at room temperature
  • 1/2 cup of vegetable oil
  • 1 2/3 cups sugar
  • 5 eggs
  • 1 1/2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup coconut milk
  • 4 ounces sweetened shredded coconut
  • 12 passionfruit
  • 2 large eggs
  • 2 large egg yolks (save the whites for the meringue)
  • 1/3 cup of sugar
  • 3 tablespoons coconut oil
  • 1/3 cup of coconut cream
  • 2 egg whites (leftover from passionfruit curd)
  • 3 tablespoons sugar
  • 1/2 tsp cornstarch
  • 1/8 tsp salt
  • 1/4 cup of sugar
  • 1/4 cup of water
  • 1 passionfruit (leftover from passionfruit filling)
  • blowtorch
