Pasta with Zucchini
of your choice of pasta
zucchini, or 4 small zucchini
Butter, softened, about 3 ounces Grated Parmesan
Cook the pasta according to package directions, then drain in a colander.
More specifically, I made us some herbed pasta with roasted zucchiniand potatoes. Alas, I personally do not have a grill…BUT roasted veggies are pretty awesome too, especially since you can just pop them in the oven and basically forget about them while you cook the pastaand do other stuff
Place the vegetables andzucchini/carrotpasta in a bowl. Use your favorite store-bought pasta sauce, make your own quick marinara or do like my grandmother taught me and make the kind that simmers in a big pot all day
