Pasta Salad with Creamy Lemon Balsamic Dressing

Ingredients

  • 1/2 lb small cut pasta (I used Rotini)
  • 1 Cup grape tomatoes, halved (quartered if large)
  • 3 Sweet mini peppers, 1 red, 1 orange and 1 yellow, chopped
  • 1 Ripe avocado, seed removed and chopped
  • 2 1/2 Tbsp Feta crumbles
  • 2 Tbsp fresh flat leaf parsley, roughly chopped
  • 2 Tbsp lemon flavored white balsamic vinegar*
  • 2 1/2 Tbsp plain Greek yogurt
  • 3 1/2 Tbsp olive oil
