Ingredients

  • 2 large peaches. What to do, what to do…. MAKE SALAD! I also had left over candied walnuts from Apple Pie French Toast and some champagne vinegar from a smashing salad dressing I made the night before. Sometimes recipes developed out of all the little leftover pieces are the best. This was one of those cases!

  • 1 bag of Spring Mix lettuce (or greens of choice)
  • 2 large peaches, pitted and thinly sliced
  • 1/2 cup Gorgonzola cheese, crumbled
  • 1 shallot, minced
  • 1/4 cup brown sugar
  • 1 cup halved walnuts
  • 1 tablespoon butter
