Ingredients

  • 2 ears sweet corn, husks and silks removed
  • 15 tablespoons lime juice
  • 11 fresh poblano chile pepper, halved and seeded
  • 11 small yellow onion, cut crosswise into ½-inch slices
  • 11 medium peach, halved and pitted
  • 11 15- oz. can black-eyed peas, rinsed and drained
  • 12 tomatoes, seeded and chopped (1 cup)
  • 1¼ cup chopped fresh cilantro
  • 1¼ teaspoon ground cumin
  • 1 Sea salt and freshly ground black pepper, to taste
  • 112 corn tortillas
  • 1 Chili powder, to taste
