Ingredients

  • Crust (adapted from Baking by James Peterson, my favorite cookbook)
  • 1 cup cake flour
  • 1 cup
  • 1/2 teaspoon salt
  • 1 cup cold butter
  • 1/2 inch cubes
  • 3/4 cup ice water
  • 1 cup soft goat cheese, softened in the microwave
  • 1/2 cup heavy cream
  • 1 egg
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 3 cups thinly sliced apples
