Ingredients

  • 2 1/2 cups all purpose flour
  • 4 Tbsp cold, unsalted butter, cut into small cubes
  • 1 tsp salt
  • 3 tsps baking powder
  • 1/2 cup 2% milk
  • 1/2 cup buttermilk
  • Generous pinch of freshly ground pepper
  • 4 pork sausages (preferably bratwursts)
  • 3 cups milk
  • 3 Tbsp flour
  • 3 Tbsp unsalted butter
  • 1 Tbsp olive oil
  • 2 stalks celery, diced
  • 1/2 medium yellow onion, diced
  • 1/2 cup beer (or whatever you prefer to use to deglaze)
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon dried thyme leaves
  • Salt, to taste
  • Pepper, generously, to taste
