  • 1 3/4 cups heavy whipping cream
  • 1 cup (2 sticks) unsalted butter, cut into 8 pieces
  • 3 tablespoons light corn syrup
  • 1 1/2 pounds bittersweet chocolate (do not exceed 61% cacao), chopped
