  • 2½ cups flour 1½ tsp baking powder ¼ tsp salt 1½ sticks butter, room temp 1 egg ¾ cup sugar 2 Tbsp water 1 tsp vanilla ¾ cup peppermint crunch baking chips Instructions Preheat your oven to 350 degrees. In a small bowl mix together the flour, baking powder and salt. In a large bowl, using an electric hand mixer, cream the butter until smooth. Add in the sugar and mix until well combined. Next add in the egg, vanilla and water and mix until light and fluffy. Add in half the dry ingredients and mix until just combined. Repeat with the remaining dry ingredients. Be sure not to over mix. You want the dough just combined, use a wooden spoon to incorporate any flour that didn’t get in there. Stir in the peppermint crunch baking chips Using a small scoop, plop the cookie dough out onto a parchment lined cookie sheet about an inch apart from each other. Bake for for 10-12 minutes or until the very outer edge is lightly golden. 3.5.3208
