  • 1/4 cup olive oil,
  • 1 tsp kosher salt,
  • 1 tsp finely chopped rosemary
  • 425 degrees with the lid on, but you can certainly use your oven. After 10 minutes I reduced the heat to 375 degrees and cooked until a meat thermometer inserted into the thickest part read 136 degrees I removed the beef from the roaster, covered it loosely with foil, and let it rest for 20 minutes while I finished preparing the side dishes. Save the pan juices in a small saucepan to heat and pour over the beef when serving. While not traditional with beef tenderloin, a nice horseradish sour cream sauce is always welcome at my table, even on Valentine’s Day.
