Ingredients

  • 3/4 cup plus
  • 3 tablespoons sugar
  • 3 eggs, separated
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/4 cups cake flour
  • 1 3/4 t baking powder
  • 1/4 t salt
  • 3/4 cup of the sugar. Continue whisking about 5 minutes Add egg yolks one at a time until mixture is smooth. Whisk in the milk and vanilla. Then sift in the flour, baking powder, and salt. Do not overwork. Add about seven drops of red food coloring and two drops of yellow food coloring to the batter.
  • 30 drops of red and
  • 6 drops of yellow
  • 1 1/2 + 1/4 cup sugar
  • 1/2 cup water
  • A bowl of ice water or a candy thermometer
  • 2 tablespoons corn syrup (I just always add corn syrup to cooking sugar just in case so it doesn't crystallize)
  • 6 egg whites
  • pinch of cream of tartar
  • 1 1/2 cups cold butter, cut into cubes
